Blue Bosc with Maple Caramelized Onions
A simple but classy way to dress up sweet and savory into one harmonious bite. Pairs well with wine.
Ingredients:
1-2 ripe Bosc pears
250g of creamy blue such as Gorgonzola or Cambazola
1 spanish onion, sliced and caramelized
1 tbsp of butter
2 tbsp of Maple syrup
Instructions:
In a medium pan, melt butter until brown and nutty, take care not to burn butter. Add sliced Spanish onion and maple syrup, stir frequently and caramelize
onions until browned, about 30 minutes. Remove from heat and allow to cool in room temperature or store in fridge to cool faster. Slice 1-2 ripe Bosc pears lengthwise and place on a serving board. Place 1 dollop of Gorgonzola cheese in the centre of each pear slice. Top with caramelized onions and serve. Enjoy. Serves 8-10.
