The "other" meatball sub
I will admit that one of the few times I have been jealous of carnivores is surrounding the topic of the meatball sub. I can only imagine the crisp, chewy bread, the tangy marinara sauce, the stringy, gooey mozzerella...So I decided to make the "other" meatball sub, the vegetarian Eggplant Parm Sub to emulate what I have been missing out on.
