Mushroom Thyme Gravy
Ingredients:

2 tbsp. butter or EVOO

1 garlic clove, minced

1 small onion (or 3 shallots), minced

1 cup Cremini mushrooms, chopped

1 tbsp. all-purpose flour

2 cups of your favourite broth (mushroom broth if you can find it!)

2 stems of thyme leaves

1 tbsp soy sauce/tamari/Braggs

Freshly ground pepper, to taste

1 bay leaf
Also, need a blender or hand-held immersion blender.

Directions:

Heat butter/oil on medium heat in a medium saucepan.

Add in garlic, onions/shallots.

Sauté 2 minutes then add in mushrooms.

Sauté 8-10 minutes, or until onions/shallots are transparent.

Add in flour and stir to coat mushroom onion mixture evenly.

Deglaze the pan by adding broth and add in full stems of thyme leaves.

Turn heat to high and bring to a boil, stirring frequently.

Boil 5 minutes and then reduce heat to low and simmer, covered for 10-15 minutes, or until mixture is thick, be sure to stir occasionally so gravy doesn’t stick to the bottom.

Stir in soy sauce/tamari/Braggs and freshly ground pepper.

Blend until smooth consistency is reached.

Add in 1 bay leaf and continue to simmer on low heat until ready to serve, stirring occasionally.
Serve over your favourite potato (baked, mashed, smashed, hash, fries etc.) and enjoy!
