Greek Rice
Tour Greece with this hearty dish!
Ingredients:
2 cloves of garlic, chopped
Juice and zest of 1 lemon
1/4 cup fresh oregano, chopped or 1 tsp of dried oregano
1/4 cup fresh mint, chopped
1 cup of rice (I recommend short grain brown for this recipe)
2 cups of your favourite broth
2 tbsp. Extra virgin olive oil
Salt and pepper, to taste
*Optional: Grilled pita bread, tzatziki and feta cheese.
Directions:
In a medium saucepan heat to medium-high add 1 tbsp olive oil, garlic and dry rice. Stir frequently and toast the rice until golden brown. Add broth and bring to a boil. Also if using dried oregano add to pot with broth. Follow cooking instructions according to rice selected. Remove pan from heat after cooking. Stir in lemon juice, zest, fresh oregano, 1 tbsp olive oil and fresh mint. Season to taste with salt and pepper.
Recommended served with grilled pita bread, tzatziki and crumbled feta!
