Hummus & Pesto
Sun-dried Tomato & Lemon Hummus Recipe
Ingredients:
1 can of chick peas, rinsed
Juice and zest of 1 lemon
1 clove garlic, chopped
1/4 cup of sun dried tomatoes in oil
1 tbsp tahini
1/4 tsp of smoked paprika
1/2 cup of olive oil
Salt and pepper, to taste
Directions:
After rinsing chick peas combine chick peas, oil, lemon juice and zest and tahini into a blender or food processor. Blend until smooth (with minimal lumps) and add in SDT, garlic, paprika and black pepper. Blend until smooth. Taste before adding salt as SDT are very salty on their own and more salt and pepper as desired while tasting.
Note: Depending on the quality of your blender or food processor additional olive oil may be needed to help emulsify the hummus. Alternatively, you can use water as well but this will affect the taste and make it less concentrated.
Recommended with vegetables, flat bread, crackers, rice chips, naan. Enjoy!
Kale, Lemon & Walnut Pesto Recipe
Ingredients:
1 bunch of kale, washed and dried, cut off and discard stems and ribs (down the centre of each leaf) and coarsely chop the kale
1 clove garlic, chopped
1 bunch of basil, washed and dried, cut off and discard stems
1 cup of olive oil
Juice and zest of 1 lemon
3/4 cup of walnuts, toasted
Salt and pepper, to taste
Directions:
In a food processor or blender combine the kale, basil, lemon juice and zest, oil and garlic. Blend until smooth. Add in the toasted walnuts and blend until smooth.
Add salt (quite a bit will be needed) and pepper while tasting and blending until desired saltiness is reached.
Note: Depending on the quality of your blender or food processor additional olive oil may be needed to help emulsify the ingredients into a smooth pesto. Alternatively, you can use water as well but this will affect the taste and make the pesto less concentrated.
Serving suggestions:
On flatbread, as a base to a pizza, toss with your favourite hot pasta and Parmesan, stir into cooked rice or risotto, serve as a cold dip with vegetables, crackers, flatbread or rice chips. Use as a marinade on meat or seafood, or as a topper on cooked meat or seafood.
