Amy's Thai Summer Salad

Perfect for adding the veg factor at your summertime BBQ!

Thai Sauce Ingredients:
- 1 can of coconut milk
- zest and juice of 1 lemon
- 1/4 cup of all natural peanut butter
- 1 piece of peeled fresh ginger (about the size of your thumb)
- 1 clove of peeled garlic
- 1 tbsp. sesame oil
- 1 tbsp. tahini
- 1 tbsp of soy sauce
- 2 tbsp of maple syrup
- 1 dash of cayenne pepper
- freshly ground black pepper

Directions:
Put all ingredients into a blender and blend until smooth. You may need more soy sauce or maple syrup to taste. If sauce becomes too thick overnight, add water to loosen.

Quinoa Salad Ingredients:
- 2 cups of dry quinoa
- 4 cups of your favourite broth
- 1 cup of chopped bell peppers
- 1 cup of sugar snaps, julienned lengthwise
- 1 cup of cherry tomatoes cut in half
- 1/2 pkg. of shredded carrot and broccoli slaw
- 2-3 green onions, chopped
- 1 pkg of fresh basil and or cilantro, chopped finely

Directions:
1. Cook 2 cups of quinoa in 4 cups of broth and let it cool until room temperature.
2. Toss in fresh veggies and herbs and stir to mix in evenly.
Serving: Serve quinoa onto plates and pour as much or as little sauce as is desired.
Garnish suggestion: garnish with chopped fresh cilantro or parsley. Enjoy!
