Basil Onion Tomato (B.O.T.) Tarts
Tomato and basil are always a winning combination, so why not put them in a savoury tart? A match made in heaven, I think so!
Crust Ingredients:

1/2 cup of flour
1/2 cup corn meal
1/2 cup Parmesan, grated
1 tsp of fresh thyme or rosemary, chopped
1/4 cup olive oil
1/4 cup of warm water
Season with sea salt and pepper
Directions: Knead all ingredients in a large bowl until dough comes together. Form dough into greased metal tart shells (makes 6 regular sized tarts) and chill in fridge.
Filling Ingredients:
1 tbsp butter
1 large spanish onion, finely sliced
1 tbsp of Canadian maple syrup
1 cup of thinly sliced heirloom tomatoes, or cherry tomatoes
1/2 cup of Parmesean cheese, grated
Sea salt and pepper, to taste
1/4 cup fresh basil, chopped
Filling Directions: Preheat oven to 400F. In a medium pot over high heat melt butter and add onion. Carmelize onion until golden brown, about 30 minutes over medium heat after carmelized, add maple syrup and stir and remove from heat. Remove shells from fridge. Fill each tart evenly with carmelized onions. Decoratively place sliced tomatoes over top of onions, season to taste with sea salt and pepper. Add grated parmesean cheese to each tart on top of the tomatoes. Bake at 400F until golden brown, approximately 20-25 minutes. Garnish with fresh basil and serve warm. Enjoy!
