Blue Cheese Rigatoni
Sinfully delicious! The creamy, sweet, and yet slightly funky flavour of blue cheese seems to make most mouths water. Here is a quick reduction sauce that will satisfy your blue cheese cravings.
Ingredients:
1/2 cup of salted butter
1 small onion, peeled and diced
2 cloves of garlic, peeled and minced
1 tsp of freshly grated nutmeg
1 small container of extra creamy blue cheese (approximately 1 cup), crumbled
2 cups of heavy cream
Freshly ground black pepper, to taste
Fresh chives, chopped (garnish)
Instructions:
In a medium saucepan melt butter over medium heat until butter turns brown and nutty -- take care not to blacken and burn butter. Immediately, add onion, stirring frequently to caramelize the onions, this will take 15-20 minutes until the onions turn brown and become caramelized. Add in the garlic and stir for 2-3 minutes until garlic is fragrant but not browned. Add cream, crumbled blue cheese, nutmeg and pepper and stir frequently until cheese melts into the sauce. Over medium heat, bring sauce to a gentle boil, then turn heat to low, to reduce sauce by half, about 20-30 minutes.

When serving, garnish with fresh chopped chives. Serve over your favourite noodle, on grilled chicken or steak, or anything else your heart desires!
