Amy's Power Balls
Feeling low? Bite into these power balls for a sweet treat, protein hit and nutrient-packed pick-me-up.
Ingredients:
2 cups of flaked quinoa
2 cups of unsweetened almond milk
2 tbsp of Madagascar bourbon vanilla extract
1/2 cup of ground flax seed
2 cups of Medjool dates (pitted)
4 tbsp of flax seed oil
1 cup of unsweetened shredded coconut
1 cup of raw cacao powder
1 cup of unsweetened dark chocolate, melted
Toppings (optional):
Cinnamon Powder
Cocoa Powder
Sesame Seeds, toasted
Ground Pecans, toasted
Ground Almonds, toasted
Instructions:
In a small bowl add lime zest and juice, tamari, maple syrup and sesame oil, whisk until combined.
In a large bowl, add quinoa flakes, flax seed, vanilla and almond milk and stir to combine. Soak for 10-15 minutes until slightly softened.
In a food processor combine quinoa-flax mixture, dates, flax seed oil, coconut and cacao powder and pulse until combined.
Using a double-boiler, melt dark chocolate over low heat.
Transfer back into a large bowl, and add melted dark chocolate. Stir to combine. Allow to cool and set in fridge for 1 hour.
Scoop out 1 tbsp at a time and roll into balls using the heat of your hands. Toss in ground cinnamon powder, cocoa powder, toasted sesame seeds, ground almonds or pecans, or anything else your heart desires! Cover and store in fridge or freezer until ready to eat. Enjoy!
