Caprese Skewers

Salad can get a little tired...take these classic Italian ingredients put them on a skewer and instantly create a beautifully presented caprese salad in a single refreshing bite.

Ingredients:
1 pint of ripe cherry tomatoes
500g of mini Bocconcini balls 
1/2 cup of fresh basil pesto
Fresh basil to garnish, optional
Sea salt & black pepper, to taste
8-10 mini skewers







Pesto Ingredients:
1/2 cup of olive oil
3 cloves of garlic
3 bunches of fresh basil
Zest of 1 lemon
Juice of 1 lemon

Instructions:
Place 2 cherry tomatoes and 2 bocconcini balls on each skewer. Place skewers on a serving tray, top with pesto, basil and garnish with sea salt and black pepper. Serve and enjoy!

Pesto Instructions:
Add oil, garlic, zest and juice from lemon into a food processor or blender, blend until smooth. Slowly add in basil and kale to turn into a thick pesto. Season with sea salt and pepper.
